Goat Cheese and Pesto Crescents combine the ease of refrigerated dough with the satisfaction of homemade pesto into an impressive appetizer or bread to serve alongside Italian food. Or, if you’re feeling especially pressed for time, use a store-bought pesto for true simplicity.
Honest! They don’t take long!
Believe me, though, from start to finish (making the pesto to pulling these babies out of the oven), took me 30 minutes.
After making Bacon Wrapped Goat Cheese Stuffed Dates, I had some cheese left, so I made up this Goat Cheese and Pesto Crescent recipe. It’s a flavorful take on refrigerated crescent rolls, and I was pleasantly surprised that the filling didn’t ooze out one bit.
Simplicity
Once your pesto has been made (or, the jar has been acquired should you go the route of ready-made pesto), you just unroll the crescent roll dough, spread on some pesto, drop a teaspoon of goat cheese into the middle, and roll them up. The pesto smears on very easily because it’s thick and easy to handle.
Impressive
These flavors jazz up an otherwise plain crescent roll. Don’t get me wrong, crescent rolls are a thing of beauty all by themselves. But I have tried making them extra delicious with different fillings, and this one is the best. It stays inside, without oozing out and burning onto the sheet pan. With the egg wash, they turned beautiful golden brown and then – pow! – such a nice surprise inside. These are a must when you serve up some plain ‘ol spaghetti some weeknight!
Goat Cheese and Pesto Crescents
Ingredients
- 1 package crescent rolls
- 1/4 c pesto
- 2 T goat cheese crumbles
Pesto
- 3/4 c basil leaves
- 1/2 t garlic powder
- 1/4 t salt
- drizzled olive oil
- 1/4 c walnuts
- 2 T grated parmesan cheese
Instructions
Prepare Pesto
- In a small food processor, combine washed and dried basil leaves, garlic, and salt and process until smooth.
- Drizzle a small amount of olive oil, just enough to make it a spreadable consistency.
- Add walnuts and parmesan cheese and process again, adding a little bit of oil if needed.
Assemble Crescents
- Open package of prepared crescent roll dough and place each triangle onto a baking sheet.
- Spread about a tablespoon (or less) of pesto onto each triangle.
- Add 1 t goat cheese to the larger end of each triangle and roll up rolls.
- Brush with egg wash and bake at 350° for 17 minutes.
