Little Debbie Copycat Cosmic Brownies

Have you ever bought Little Debbie Cosmic Brownies and hid them in a place where only you can find them? Do you love a decadent chocolatey brownie? If the answer is yes, then this Little Debbie Copycat Cosmic Brownies recipe is for you!

Like its copycat counterparts Girl Scout Thin Mints, and Crumbl Chilled Sugar Cookies, these Little Debbie Cosmic Brownies hit the spot when you’re looking for that familiar flavor and texture that you purchase at the shop (or from the little girl outside the grocery store).

Little Debbie Copycat Cosmic Brownies

The hardest part about these brownies is finding the itty bitty bright-colored chocolate candies that go on top. But it turns out, they were right there on the shelf at my Kroger store. You also need to be sure to have heavy cream on hand, because the chocolate ganache on top is a simple melting together of chocolate chips and heavy cream. Frosting will not do. And milk will not mix with the chips to make a good ganache.

Otherwise, these brownies are pretty straightforward and mix up easily in one pan. Just start by melting the butter or margarine, add the sugars and egg, and then mix in all of the dry ingredients. After they are baked and cooling, you melt and stir up the ganache in like a minute. It is poured over the brownies, and then the signature rainbow chocolate candies are added for a finishing touch.

Little Debbie Copycat Cosmic Brownies

Ingredients
  

  • 1 1/2 sticks margarine or butter melted
  • 2/3 c brown sugar
  • 3/4 c granulated sugar
  • 3 T whole milk
  • 2 t vanilla
  • 2 eggs
  • 3/4 c unsweetened cocoa powder
  • 1 1/4 c flour
  • 1/2 t baking powder
  • 1 T cornstarch
  • 1 pinch salt

Ganache

  • 1/3 c heavy cream
  • 1 c semi sweet chocolate chips

Topping

  • 2 T rainbow chocolate candies

Instructions
 

  • Preheat oven to 350°. Spray a 9x13 inch pan with nonstick spray
  • In a medium saucepan, melt butter or margarine and add both sugars, beating until well combined. Add milk, vanilla, and eggs, continuing to beat until incorporated.
  • Add dry ingredients and mix just until combined. Pour batter into prepared pan and bake for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool.
  • Prepare chocolate ganache: place chocolate chips and heavy cream in a microwave safe bowl. Microwave for 1 minute. Whisk together until mixture is completely smooth. Pour ganache over slightly cooled brownies.
  • Add the finishing touch of rainbow chocolate candies. Chill before cutting.
