Bread is essential to life. Or at least to enjoying life. There’s nothing like warm, buttery bread to enhance a meal. Its soft, chewy, delicious sweetness rounds out savory meat and vegetables with satisfaction.
I have been making these baking powder biscuits my entire adult life. They come together with a little effort while soup is simmering. This is my go-to recipe for biscuits and gravy or SOS. Leftover biscuits are yummy warmed up with a peach for an afternoon snack or simple dessert. Or the next morning, add an egg and piece of bacon for your own at-home breakfast sandwich.
Sky High Biscuits
The great thing about quick breads is that they can be made on the fly. Baking powder activates faster than yeast, so there is no rise or rest time. These Sky High Biscuits can be whipped up in under half an hour.
Sky High Biscuits
Ingredients
- 2 c flour
- 1 c whole wheat flour
- 4 1/2 t baking powder
- 2 T sugar
- 1/2 t salt
- 3/4 t cream of tartar
- 3/4 c margarine
- 1 egg
- 1 c milk
Instructions
- Combine flours, baking powder, sugar, salt, and cream of tartar.
- Cut in margarine until mixture resembles coarse cornmeal.
- Add egg and milk, stirring quickly and briefly.
- Knead lightly on floured board.
- Roll to 1" thickness. Cut and place on cookie sheet. Bake 450° for 12-15 min.
Enjoy Sky High Biscuits with chili, vegetable soup, roast and potatoes, salmon patties, or a salad.
