Ravioli: Homemade Sauce on Prepared Pasta

This recipe, adapted from a Taste of Home website version, is especially good as leftovers. I really think the flavors melded and the sauce thickened as it sat for two days.

A big plus: it was super easy.

1 package (20 oz) frozen or refrigerated ravioli (cheese or beef; I used beef this time)
1 can (14 1/2 oz) diced tomatoes, undrained
1 c beef broth
1 can (8 oz) tomato sauce
1 T brown sugar
1 t dried oregano
1/4 t salt
1/4 t pepper
2 c fresh spinach

Cook ravioli according to package directions. Meanwhile, in a large skillet, combine the tomatoes, broth, sauce, and spices. Bring to a boil. Reduce heat and simmer, uncovered, until heated through.

Drain ravioli; add to tomato mixture. Stir in spinach; cook and stir for 4-5 minutes or until wilted. 4 servings.

1 serving: 503 calories, 10 g fat, 1,162 mg sodium (yowzers! Probably less because I used homemade beef broth), 9 g fiber, 26 g protein.

    I have never purchased packaged ravioli. I must try this recipe sometime. Maybe you can introduce us to it when we visit….? Is the ravioli in the frozen food section?

    Yes, I get frozen ravioli (and tortellini, too) in the frozen foods, usually by the french fries. My grocery store also has fresh ravioli that's a little pricier, and I find it in the refrigerated section by eggs or cheese.
