Low Carb Energy Bites

Sweet and filling, these high-fiber bites are another go-to for beating the afternoon munches. Have one and let it fill you up, and you're set until dinnertime.

Ingredients
  

  • 1/2 c Medjool dates packed, (about 10) - 100 grams!
  • 1/2 c almonds
  • 1/2 c walnuts
  • 2 T flax seeds
  • 1/3 c dried cranberries
  • 1/3 c shredded coconut
  • 1 T maple syrup

Instructions
 

  • First, cut up the dates with a knife or kitchen scissors. Then, pulse them in food processor until they begin to stick together. Remove from processor.
  • Grind nuts and seeds in food processor, then add back in dates, dried cranberries, coconut, and maple syrup and process until moist and crumbly.
  • Add a bit of water, a teaspoon at a time, to ensure mixture will press together into balls. Dump out mixture and form into balls.
