The Best Egg Casserole with Hash Brown Crust - Gluten Free

Ingredients
  

Layer in bottom of pan:

  • 2 c shredded hash browns
  • 1/4 t salt, sprinkled over hash browns
  • 1 c cooked ham, bacon, or sausage crumbles

Egg Mixture - combine in bowl and whisk together, then pour over hash browns and meat:

  • 6 eggs
  • 1/2 t salt
  • 1/2 c half and half or whole milk
  • 1/2 t paprika
  • 1/2 t pepper

Sprinkle over top:

  • 1 c shredded cheddar cheese

Instructions
 

  • Preheat oven to 350°. Prepare 8" baking dish by spraying with non-stick spray.
  • Place hash browns into bottom of pan and lightly press into an even layer. Scatter meat of choice all over the potatoes.
  • Mix eggs, milk or half and half, and spices in a bowl with a whisk, hand beater, or electric mixer on low. Pour into pan.
  • Top with shredded cheese and place into preheated oven for 30 minutes. Remove from oven and allow to set up for 10 minutes before serving.
