The Best Egg Casserole with Hash Brown Crust - Gluten Free

Hot, cheesy, satisfying breakfast and makes great leftovers

Cook Time 30 mins
Layer in bottom of pan:
- 2 c shredded hash browns
- 1/4 t salt, sprinkled over hash browns
- 1 c cooked ham, bacon, or sausage crumbles
Egg Mixture - combine in bowl and whisk together, then pour over hash browns and meat:
- 6 eggs
- 1/2 t salt
- 1/2 c half and half or whole milk
- 1/2 t paprika
- 1/2 t pepper
Sprinkle over top:
- 1 c shredded cheddar cheese
Preheat oven to 350°. Prepare 8" baking dish by spraying with non-stick spray.
Place hash browns into bottom of pan and lightly press into an even layer. Scatter meat of choice all over the potatoes.
Mix eggs, milk or half and half, and spices in a bowl with a whisk, hand beater, or electric mixer on low. Pour into pan.
Top with shredded cheese and place into preheated oven for 30 minutes. Remove from oven and allow to set up for 10 minutes before serving.
