Pumpkin Chip Muffins
a bite of Fall at your fingertips, these mini or standard-sized muffins are great with a warm beverage

- 4 eggs
- 2 c sugar
- 1 can pumpkin 16 oz
- 2/3 c vegetable oil
- 3 c flour
- 2 t baking soda
- 2 t baking powder
- 1 t cinnamon
- 1 t salt
- 1 1/2 c chocolate chips
Combine eggs, sugar, pumpkin, and oil and stir until smooth
Add flour, soda, powder, cinnamon, and salt. Mix well
Fold in chocolate chips
Fill greased or paper-lined muffin cups 3/4 full
Bake at 400° 20-25 minutes. Cool in pan 5 minutes before removing to a wire rack to completely cool. Store in an airtight container. These freeze well!
