After making Stuffed Sweet Potato Boats, I had about 2 cups of luscious, mashable, tasty sweet potato flesh ready for Sweet Potato Mash. It could have been made into a brown-sugar-and-pecan souffle, or just eaten with a little sprinkling of cinnamon and sugar. This time, however, it was prepped to go on top of a dish of Shepherd’s Pie. The Mash could also be served as a side dish to roast, chicken, burgers, or almost anything!
This Shepherd’s Pie recipe is also another use for mirepoix, a combination of onion, carrots, and celery that serve as a savory base for so many soups and casseroles. If you have browned ground beef on hand, this comes together in no time. But what about sweet potatoes on top of Shepherd’s Pie? Maybe you’re thinking it should only be mashed potatoes! Sweets, however, are friendly for anyone avoiding nightshade vegetables. Plus, this is a vibrant color and a nice change of pace.

Shepherd's Pie
Ingredients
- 1 pound ground beef, browned
- 1/2 t garlic powder
- 1/2 t paprika
- 1/2 t celery seed
- 2 c mirepoix or, 1 c onion, 1/2 c celery, 1/2 c carrots, all diced and sauteed with the ground beef during last part of cooking
- 1/2 c beef broth
- 1/4 c frozen peas
- 1 t Worcestershire sauce
- salt and pepper to taste
- 2 c prepared mashed potatoes or sweet potatoes see Sweet Potato Mash recipe
Instructions
- Brown ground beef and drain.
- Sprinkle with salt and pepper, add garlic powder, paprika, and celery seed.
- Add prepared mirepoix or diced vegetables (onion, carrots, celery) and cook until veggies are tender, about 10 minutes. Add beef broth as needed to keep the mixture moist.
- Add peas, Worcestershire sauce, and check flavor, adding salt and pepper if needed.
- Spoon into a pie plate. Top with mashed potatoes or mashed sweet potatoes. Bake at 350° for 20-30 minutes until bubbly.


Sweet Potato Mash
Ingredients
- 2 c sweet potato flesh
- 2 T butter
- 2 T sour cream
- 1/2 t salt
- 1/2 t pepper
Instructions
- Assuming you have already baked and scooped out two sweet potatoes, this recipes comes together quickly. If not, then you need an extra hour to hour and a half to prepare the sweet potatoes by baking, cooling, and scooping out the flesh. Use just the soft flesh from the inside of the baked sweet potatoes.
- Combine the soft flesh with butter, sour cream, salt, and pepper. Mash with a potato masher or briefly mix with electric mixer.
- If desired, scoop into a piping bag with a large tip and pipe onto Shepherd's Pie or serve alongside roast or chicken.
