Ingredients
Layer in bottom of pan:
- 2 c shredded hash browns
- 1/4 t salt, sprinkled over hash browns
- 1 c cooked ham, bacon, or sausage crumbles
Egg Mixture - combine in bowl and whisk together, then pour over hash browns and meat:
- 6 eggs
- 1/2 t salt
- 1/2 c half and half or whole milk
- 1/2 t paprika
- 1/2 t pepper
Sprinkle over top:
- 1 c shredded cheddar cheese
Instructions
- Preheat oven to 350°. Prepare 8" baking dish by spraying with non-stick spray.
- Place hash browns into bottom of pan and lightly press into an even layer. Scatter meat of choice all over the potatoes.
- Mix eggs, milk or half and half, and spices in a bowl with a whisk, hand beater, or electric mixer on low. Pour into pan.
- Top with shredded cheese and place into preheated oven for 30 minutes. Remove from oven and allow to set up for 10 minutes before serving.
