Not many desserts are both as simple and as impressive as cream puffs. I served these to friends a few days ago and was met with exclamations of, “You made these?!”
Four ingredients. Quick and easy. Here’s how:
Heat margarine and water in a pan:
Bring to a boil, and have your flour and eggs ready and waiting:
Add all flour at once to the boiling margarine and water and stir quickly over low heat:
Keep stirring until batter forms a ball:
Add eggs all at once:
Beat until completely incorporated:
Using a cookie scoop or a spoon, dip portions onto a baking sheet:
Bake at 400° until crisp and golden. about 30-40 minutes; cool away from a draft, and do not store in an air-tight container or they will get soft.
Fill with whipped cream, meringue, pudding, or ice cream for dessert
and dust with powdered sugar.
OR, fill with a spoonful of a meat salad
(chicken salad, ham salad, etc.) for a different luncheon treat.
The recipe:
1/2 c water
1/4 c margarine
1/2 c flour
2 eggs
OR, Party Portions:
2 c water
1 c (2 sticks) margarine
2 c flour
8 eggs
