Paleo Pizza Crust

Ingredients
  

Crust

  • 2 1/2 c almond flour
  • 2 t Italian seasoning thyme, oregano, rosemary, sage
  • 1/2 t salt
  • 1/4 c coconut oil (melted) melted (extra virgin, unrefined, Costco tub with orange lid) (refined did not produce the same flavor and result) Butter could be subbed if you prefer
  • 2 large eggs

Instructions
 

  • Preheat oven to 400° and place rack toward the bottom of the oven for a crispier crust.
  • Combine all dry ingredients. Then combine all wet ingredients, and then combine all. Once batter is sticky, roll it into a ball. Using kitchen gloves makes this easier. Knead for a couple minutes. No extra almond flour, just keep kneading. Press dough into parchment-lined pan. Place wax paper on top, use rolling pin to roll slightly thicker than 1/4" - no less, or it may burn.
  • Press fork holes into crust
  • Bake 12-14 minutes until edges are brown and center is golden. It will be a crisp disc.

Notes

Coconut oil:  recommend extra virgin, unrefined, Costco tub with orange lid (refined did not produce the same flavor and result) Butter could be substituted if you prefer
