My friend Brandy has conquered some serious food sensitivity issues and is here to share about how she enjoys Pizza Night with her family by making this paleo grain free pizza crust, sauce, and toppings for herself, along with two other varieties for her husband and children!
Any combination of the components can be used, so if you already have a sauce and topping plan but just need that perfect crust, try hers! Or if you’ve been wrestling with a sauce that isn’t quite thick enough, you might want to check out her slow-simmered sauce to make ahead. Whatever your needs are, we think you’ll enjoy her version of pizza, which is gluten free, dairy free, paleo, and FODMAP friendly.
A Tale of a Girl with Tummy Trouble
Hi! My name is Brandy Connelly, and I am so excited to be a guest on the CWR Blog! I am a mother of three, a daycare provider by day, and a yoga instructor by night. Recently, Rebecca was asking for followers to share recipes for dietary sensitive individuals; I definitely fall into that category, so I’d love to share!
A little backstory: I have had dietary restrictions for 25 years now; I was diagnosed with Celiac when I was ten years old, and I have a number of intolerances on top of that such as dairy, garlic, onion, peas, bananas, and the list goes on. So I have been reading ingredient labels and adjusting recipes to suit my own needs for many, many years. Seven years ago I was diagnosed with SIBO, and that rocked my world a bit more. For six years I couldn’t have grains, sugars, or any other foods that ferment at a high rate during digestion. To say I learned a lot would be an understatement. It was really an eye opening experience to learn about how our bodies process foods, even whole, fresh-from-the-garden foods. I now eat a low FODMAP diet, which is keeping my system healthy and thriving.
Grain Free Pizza Crust
With that being said, I’d love to share about one of my favorite weekly go-to recipes: Pizza! Each week, my family has Friday-night pizza night, and I haven’t been able to share in this tradition. No store-bought pizza comes without garlic or onion in the ingredient list. So I do what I do best: I make my own. I have found a way to make my own delicious homemade grain free pizza crust with a homemade sauce by altering other recipes I have come across through the years. I hope you enjoy it as much as I do!

Paleo Pizza Crust
Ingredients
Crust
- 2 1/2 c almond flour
- 2 t Italian seasoning thyme, oregano, rosemary, sage
- 1/2 t salt
- 1/4 c coconut oil (melted) melted (extra virgin, unrefined, Costco tub with orange lid) (refined did not produce the same flavor and result) Butter could be subbed if you prefer
- 2 large eggs
Instructions
- Preheat oven to 400° and place rack toward the bottom of the oven for a crispier crust.
- Combine all dry ingredients. Then combine all wet ingredients, and then combine all. Once batter is sticky, roll it into a ball. Using kitchen gloves makes this easier. Knead for a couple minutes. No extra almond flour, just keep kneading. Press dough into parchment-lined pan. Place wax paper on top, use rolling pin to roll slightly thicker than 1/4" - no less, or it may burn.
- Press fork holes into crust
- Bake 12-14 minutes until edges are brown and center is golden. It will be a crisp disc.
Notes

Paleo Pizza Sauce
Ingredients
- 4 lbs tomatoes roma (or any kind)
- 1 T olive oil
- 1 T sugar or sweetener of choice - honey, coconut sugar, Stevia (1 t)
- 1 t thyme
- 1 t oregano
- 1 t cumin
- 1/2 t salt
- 1/2 t pepper
Instructions
- Peel tomatoes - boil 45 seconds, remove skins, then blend, process, or puree and add to pot.
- Add seasonings, bring to a boil. The moment it begins boiling, lower heat and allow it to simmer for one hour with the lid off.
- Place a lid on top and continue simmering another hour. Whisk throughout the cooking time - every 15 minutes or so. The sauce will reduce during this second hour. In drier climates, the cooking time may be reduced by about 40 minutes - just simmer until it's at the desired thickness.
- This amount covers 3 pizzas - make it and use within 2 weeks, freeze if desired.
Toppings for Paleo Pizza
- browned hormone free organic beef – just a small portion from a pound package
- black olives
- store bought dairy-free cheese (Daiya), (this does have tapioca in it, so substitute your own preferred dairy-free cheese for 100% paleo) Brandy adds: “If you know you can eat dairy, go ahead and use regular cheese. If you want to limit the dairy, just be aware that Daiya is $5 a package and go ahead and try it.”
When crust comes out of oven, put on a thick layer of sauce, sprinkle on meat and olives, cover all with cheese. This goes back into the oven at 400° for another 12 minutes. Edges will become a little bit darker.
