Paleo Pizza Sauce

Traditional recipe, tweaked with ample seasonings to replace garlic and onion which can cause tummy trouble.
Make ahead of time since it requires 2 hours to simmer

Ingredients
  

  • 4 lbs tomatoes roma (or any kind)
  • 1 T olive oil
  • 1 T sugar or sweetener of choice - honey, coconut sugar, Stevia (1 t)
  • 1 t thyme
  • 1 t oregano
  • 1 t cumin
  • 1/2 t salt
  • 1/2 t pepper

Instructions
 

  • Peel tomatoes - boil 45 seconds, remove skins, then blend, process, or puree and add to pot.
  • Add seasonings, bring to a boil. The moment it begins boiling, lower heat and allow it to simmer for one hour with the lid off.
  • Place a lid on top and continue simmering another hour. Whisk throughout the cooking time - every 15 minutes or so. The sauce will reduce during this second hour. In drier climates, the cooking time may be reduced by about 40 minutes - just simmer until it's at the desired thickness.
  • This amount covers 3 pizzas - make it and use within 2 weeks, freeze if desired.
