Peel tomatoes - boil 45 seconds, remove skins, then blend, process, or puree and add to pot.
Add seasonings, bring to a boil. The moment it begins boiling, lower heat and allow it to simmer for one hour with the lid off.
Place a lid on top and continue simmering another hour. Whisk throughout the cooking time - every 15 minutes or so. The sauce will reduce during this second hour. In drier climates, the cooking time may be reduced by about 40 minutes - just simmer until it's at the desired thickness.
This amount covers 3 pizzas - make it and use within 2 weeks, freeze if desired.
