Caprese bites: tomato, basil, mozzarella on skewer

Caprese Bites are fresh addition to Italian food. These go well with chicken parmesan, lasagna, or even simple spaghetti and meatballs. This rendition of Caprese Salad is eye-catching, easy to eat, and an appealing option to serve as an appetizer to a large group or on a Charcuterie Board.

The three main ingredients are easy to keep on hand: tomato, mozzarella, and basil. The question is, how sophisticated will it be?

How To Put It Together

This summertime hors d’oeuvre is simply a grape tomato, basil leaf, and chunk from a ball of fresh mozzarella placed onto toothpicks. Then, I drizzle the whole platter with olive oil and balsamic vinegar, and give everything a sprinkle of freshly ground salt and pepper.
Caprese Pinwheels: stacked tomato slice, mozzarella, basilYou can also go much more casual, and frugal. If mozzarella cheese sticks are in the fridge, and maybe Roma tomatoes are on hand, pinwheels can be assembled for a pretty presentation.

Both are tasty sides that add color and freshness to a meal.

Equipment

  • toothpicks

Ingredients
  

  • 1 pint grape or cherry tomatoes
  • 1 ball fresh mozzarella
  • 1 bunch basil leaves
  • olive oil
  • balsamic vinegar
  • salt and pepper

Instructions
 

  • Wash basil and pick individual leaves from stems, placing on a towel to dry
  • Wash and dry tomatoes
  • Use a knife or melon baller to section pieces of cheese from the mozzarella ball
  • Skewer one tomato, a leaf of basil, and a piece of mozzarella onto each toothpick. Repeat until all tomatoes are used. Use any leftover mozzarella for snacking or add to a pizza
  • Lightly drizzle olive oil and balsamic vinegar over entire platter of hors d'oeuvres. Sprinkle with salt and freshly ground pepper
