Comfort food at its finest: creamed eggs over toast. What a classic, easy-to-make, satisfying, and inexpensive meal to make. Also known as SOS – that’s Stuff On A Shingle if you don’t mind – can also be served over homemade biscuits if you want to go the extra mile. Either way, it’s going to be delicious.
When I have hard boiled eggs to use, this is a good recipe to pull out. A basic white sauce, seasoned well, with chopped hard boiled egg and the option to add thinly-sliced dried beef is all it is. Ladled over your warm, toasty bread of choice for one of the great combinations in the world. You can round out the meal with some roasted or sauteed vegetables or a bowl of fruit.
The dried beef I like to use is Buddig beef available in the lunchmeat refrigerator at the store. I grab some when I know I’m going to have boiled eggs available or when a snowstorm is coming. Because this is a good meal to have after shoveling snow. Warm and comforting.

Creamed Eggs Over Toast

- 2 T flour
- 1/2 t salt
- 1/2 t pepper
- 2 c milk
- 2 hard boiled eggs peeled, rinsed, and chopped
- 4 oz Buddig beef (2 packages) chopped
- 4 pieces bread toasted
Instructions
- In your favorite skillet or saucepan, melt the butter. Add the flour, salt, and pepper, and whisk for one minute to cook off the starchy flavor.
- Slowly add in the cold milk, whisking continuously to ensure no lumps form until all of the milk has been added. Keep stirring until thickened.
- Place bread into toaster.
- Turn heat to low and add chopped eggs and beef. Allow all ingredients to warm up, then ladle mixture over fresh, hot toast and serve.
