My mom’s motto lately has been:
“Wrap it up in a tortilla!”
She has prepped runza filling, and instead of making a raised dough, quickly wrapped it in a tortilla.
She and my dad love burritos and in recent years they are big fans of grilling the finished wrap to give it a crispy exterior.
Based on her advice, tonight I made a hamburger-style quesadilla. This is what I used:
Street taco sized tortillas
Browned seasoned ground beef
Ketchup
Mustard
Dill pickle chips
Sliced tomatoes
Cheese
I assembled everything just like a quesadilla, and then pan toasted it in a small drizzle of olive oil in my cast iron skillet (the same one I had just browned the ground beef in, and then crisped up potato wedges).
Dinner done! Thanks, Mom!
