The Lazy Genius’ Change Your Life Chicken

This Change Your Life Chicken by The Lazy Genius is a tasty dinner, and the leftovers warm up soooo good in the air fryer!

I tried this recipe a year or so ago, and I don’t remember it being so tasty. This time, I followed the recipe exactly. Maybe I didn’t use bone-in thighs last time. Bone in, skin on, are both critical parts of the recipe. So is the 500° oven and chicken that has been patted very dry, which produces the crispy skin. Mmmm.

What I did for Change Your Life Chicken

First, I bought bone-in, skin-on chicken thighs on sale for $.97 a pound. I’m aiming to get a freezer so I can stock up on deals like this! This meal was a grand total of about $5, and it fed four people and I have a little bowl of leftovers.

I prepared my vegetables earlier in the day and allowed the carrots and peppers to air dry well before oiling and seasoning them. I added a couple potatoes right before cooking, since they turn brown if left out in the air for hours.

The spice rub I used for the chicken was just salt on the bottom side, and then under the skin, I sprinkled a combination of salt, rosemary, and paprika.

I also took her advice to heart when The Lazy Genius recommends to use “more salt than you think you need” on the vegetables. The ones I made were seasoned just right.

One final word: This is a winter recipe! Who wants to heat the oven to 500° for an hour in the summertime?
