If you’re looking for a Fudgy Brownie recipe that’s gluten free, I have one for you that’s also no bake! Five ingredients is all it takes to whip up this pan of delectable fudgy goodness. These fudgy brownies are honestly as rich, dense, and tasty as a Little Debbie Cosmic Brownie.

A good food processor is necessary for making these brownies. Pulverizing dates takes a lot of chopping and the food processor will make quick work to ensure the dates are smooth and creamy.
Top these brownies with any chocolate frosting, including your favorite that meets dietary needs. I went with a standard butter and powdered sugar frosting, adding cocoa and vanilla and a touch of heavy cream to get the right consistency. The sugar-free option is also detailed in the recipe below. Store these brownies in the refrigerator to keep them fresh, especially if dairy is in your frosting.

Fudgy Brownie - Gluten Free and Sugar Free!
Ingredients
Brownie Ingredients
- 1 1/2 cup dates
- 1 c almond flour
- 6 T cocoa powder
- 1 t vanilla
- 1/4 t salt
Frosting Ingredients
- 3 T cocoa powder
- 3 T maple syrup
- 2 T almond butter
- 1 t canola oil (or melted coconut oil)
- 1-2 T rainbow chocolate candies optional
Alternate Frosting With Sugar:
- 1.5 T butter softened
- 1 c powdered sugar
- 1 t vanilla flavoring
- 2 T Hershey's cocoa powder
- 1-3 t heavy cream or milk if needed for consistency
Instructions
- In a food processor, chop the dates.
- Add the almond flour and cocoa powder a little bit at a time until the mixture comes together.
- Add the vanilla and salt and continue processing until smooth and spreadable.
- Spread into an 8x8 or smaller pan and press with a spatula until the mixture is level.
- Place into the refrigerator.
Frosting:
- Prepare frosting: combine cocoa powder, maple syrup, almond butter, and canola oil until thoroughly combined.
- Spread onto chilled brownie mixture and top with rainbow chocolate candies.
- Cut into 16 pieces.
Alternate Frosting with Sugar:
- Beat all ingredients with a mixer until smooth.
- Add a tiny bit of heavy cream or milk to thin down consistency if necessary.
- Spread onto brownies and chill. Refrigerate. Cut into squares.
