If you’re looking for appetizer perfection, Bacon Wrapped Stuffed Dates are what you need! With just three ingredients, you can make an easy and impressive finger food sure to WOW your family or guests.
The flavors of goat cheese, medjool dates, and bacon go together so well, and they really do assemble in no time. The goat cheese is just dry enough that it doesn’t make a mess, and just squishy enough that it tucks into the dates with ease.
Assembly of Bacon Wrapped Stuffed Dates
The first step is to cut one side of your Medjool dates and remove the pits. That same slice is where you will place a small spoonful of goat cheese into the date. Then, just pinch it closed.
The next step is to wrap a half of a piece of bacon around each stuffed date. I have found that a whole piece is just too much, and the half secures nicely with a toothpick.
Simply bake on a baking sheet until the bacon is done to your desired crispiness.
Bacon Wrapped Stuffed Dates
Ingredients
- 12 oz medjool dates
- 4 oz goat cheese
- 16 oz bacon
Instructions
- Cut a slit in the side of each date to remove the pit
- Put a small spoonful (1/2 to 1 teaspoon) goat cheese into the same opening
- Pinch date together and wrap with 1/2 piece of bacon
- Secure with a toothpick and line up on a baking sheet
- Bake at 350° for 30 minutes, turning over halfway through

I have made these, only i HAVE NEVER STUFFED WITH GOAT CHEESE. i STUFF MINE WITH AN ALMOND. 🙂 wILL HAVE TO TRY THIS WAY NOW TOO! (OOPS…CAPS LOCK)
