In my Cooking for One or Two post, I promised to share Chicken Eight Ways. These recipes are repetitive enough that you only need to buy one kind of chicken for all of them. They are different enough that you can make one every night of the week.
Four words: Flash frozen chicken tenders.
Raw, not breaded, individual pieces, ready to thaw and cook super fast so dinner for one or ten is ready in no time at all. These are readily available at your grocery store, warehouse club, or super center in packages of 2.5 pounds to 6 pounds. Thawing is easy since the tenderloins are small.
Thawing can be done overnight or placed into the fridge the morning you intend to use them. In a pinch, you can thaw them in the microwave. Just place frozen tenderloins in a single layer on a plate or microwave-safe dish. Thaw in two-minute increments, checking on them after each.
These EIGHT interestingly different meals may become your go-to source for fast weeknight meals. Quantities are not specified so you can adjust for two tenderloins or twenty. There isn’t any science to make these recipes turn out – just use the ingredients in the amounts that you like. Especially additions like salsa or sour cream – you know when it’s too little or too much. Custom make it for your taste.
Just pick up individually frozen NON-breaded tenderloins like these, thaw as many as you want for each meal, and use these super simple instructions to make whichever flavor strikes your fancy:
