2 c flour
2 t baking soda
1 t baking powder
1 t salt
2 t cinnamon
1 1/2 c sugar
1 c vegetable oil
3 eggs
1 t vanilla
2 c shredded carrots
1/2 c flaked coconut
1 c plus 1/2 c coarsely chopped walnuts (optional, divided)
1 can (8 oz) drained, crushed pineapple
Grease 9×13 pan and lightly dust with flour
Combine dry ingredients
Combine sugar, oil, eggs, & vanilla and add to dry ingredients
Add carrots, coconut, and 1 c walnuts
Bake at 350° for 45 minutes
Cream Cheese Frosting:
3 oz softened cream cheese
4 T softened margarine
2 c powdered sugar
vanilla flavoring
butter flavoring
Cream together; add a bit of milk (1/2 T at a time) if too thick
Spread on cooled cake
Sprinkle with remaining 1/2 c walnuts
