The hardest thing about making these this year was opening my pantry to discover that a certain 16-year-old boy had claimed “ingredients” (graham crackers) as a ready-made “snack” just for him. I had to run to the store just for the grahams to whip up these Peanut Butter “Cups” in bar form:
1 1/2 c. graham cracker crumbs
6 T melted margarine
1 c. peanut butter
3 c. powdered sugar
1 t. vanilla
Mix well and firmly pat into 9×13 pan. Allow to firm up in fridge, and then top with 12 oz. melted milk chocolate.
I don’t know a trick to ensure that the chocolate won’t crack in places where you don’t want it to when you’re cutting the squares, so if you’re going for a beautiful presentation, make these Peanut Butter Balls.
In 2013, I made these in mini muffin cups and they turned out looking just like a store-bought cup!
