Queso

I’ve often said I could live on nachos. Here’s a yum-o queso dip that I whipped up – portions below make seven 1/2 cup servings that are 200 calories each. Of course, you can add or subtract quantities according to what you have on hand.

4 T margarine
1/4 c flour
12 oz 1% milk
2 oz processed cheese
3 oz ground beef
1/2 c cooked rice
1/2 c salsa

Melt margarine in saucepan and stir in flour; cook for 1 minute. Add milk and stir over medium heat until thickened. Add cheese, cooked beef, rice, and salsa, and stir until warmed through.

Serve with chips. Ooo-la-la. Yes, I think I could live on nachos.
