This salad dressing goes great on pasta and vegetables or on broccoli salad. It makes a lot, and I used it over a span of 3 weeks.
Dressing
1 c apple cider vinegar
1/3 c sugar
1 (14-oz) can sweetened condensed milk (don’t use non-fat)
2 cups low-fat Hellman’s Mayo or your favorite brand mayo or salad dressing
1 t salt
1/2 t pepper
Stir this up and store it in an airtight container. (I used the mayo jar since this recipe used up what I had in it.)
Pasta Salad – easily serves 15 people, used HALF of above dressing recipe on it
1 pound pasta – bowtie, elbow, shells
4 carrots, shredded
1 onion, diced (red onion is good, or 2-3 stalks green onion)
1/2 green pepper, diced
2 cucumbers, seeded & diced
cherry or grape tomatoes
Any other veggies in small amounts: zucchini, other colored peppers, celery
Broccoli Salad – use the other half of the dressing on this!
1 large bunch broccoli florets, chopped
1 c raisins or craisins
bacon, crisp & crumbled
1/4 c red onion, chopped
1/4 c sunflower seeds
Optional: peas or cauliflower
