This Quick Kale Salad is an easy lunch to put together. I like stripping my kale leaves and cleaning it in a tub of vinegar water right when I get home, so that I won’t pull open the crisper drawer in a week and a half and find uneaten, wilted kale. This way, it’s ready for smoothies, to pull a handful out for salad or to add to soup, it’s just ready.
Unlike my Kale and Quinoa Salad, which adds a component (quinoa) that needs to be cooked, this one comes together super fast. Just coarsely chop a few cups of kale, add in the fruit and nuts, and use a ready-made berry flavored vinaigrette dressing. Aldi sells a cranberry orange vinaigrette that goes great with this salad. Add a sprinkle of chia seeds for a high protein lunch that will keep you full all afternoon.
Quick Kale Salad
Ingredients
- 3-4 c kale stripped from stem, washed and dried
- 1/4 c dried cranberries
- 1 small apple or pear, cut into chunks
- 1/4 c parmesan cheese or goat cheese
- 1/4 c pistachios
- 1 T chia seeds
- 1 T ready made berry vinaigrette
Instructions
- Place kale in a large salad bowl and massage for one minute with 1/2 t olive oil and 1/2 t coarse salt. This will soften and season it
- Add remaining ingredients. Divide into two servings and enjoy
- Rinse, brush, or floss. You have a double whammy here with the kale and the chia seeds potentially getting stuck in your teeth
